1 1/2 cups flour 1 1/2 tbsp. rice flour 1/2 cup icing sugar 1 cup butter (cold) Filling: 1/2 cup - 3/4 cup of raspberry jam (or any other jam of your liking) The amount needed depends on how "jammy" you like your cookies to be. |

Combine flour and rice flour together, mix well. Add the icing sugar, mix well. Cut the butter up into small pieces and add in. Use your hands to mix in and to start forming a ball of dough. Roll the dough out on a flat surface, about 1/2 inch thick and using cookie cutters, cut out your shapes. Bake in a preheated oven (350F/180C) for about 10 minutes, or until you see the edges of the cookies start to brown. Remove from oven and let cool completely. Take two cookies and spread jam on the bottoms then sandwich together. Makes about 2 dozen cookie sandwiches. |
