| Crush tennis biscuits to fine crumbs and mix together with melted margarine and press into a large pie dish, bake at 180 degrees Celsius for about 10 minutes. Remove from oven and allow to cool completely. Now pour condensed milk into bowl. Pour 1 tin of milk into a separate bowl, and 2 tins of milk in a pot on the stove. Separate eggs, add egg yolks and corn flour to bowl of milk, mix well. Bring pot of milk to boil, add margarine. When margarine has melted add condensed milk, bring back to boil – Whilst waiting beat the egg whites until stiff peaks are formed - Add corn flour to the pot on the stove, stir continuously until it bubbles and thickens. When thick, remove from stove, beat in eggs whites, pour mixture over biscuits, and sprinkle with cinnamon, the more the better! Leave to cool. Refrigerate for 3 hours. |
