Oxtail And Red Wine Casserole

1kg Oxtail Pieces
30 ml Sunflower Oil
30 ml Butter
3 Carrots peeled and sliced
4 Celery stalks roughly sliced
1 Onion Chopped
30ml Balsamic Vinegar
2 Tomatoes Diced
1 Cup Red Wine
30 ml Port Wine
3 Cloves of Garlic crushed
1tsp Dried Thyme
2 Bay Leaves
400 ml of Beef Stock
Salt and Pepper to taste
Fry Oxtail pieces in oil until brown, then set aside
Throw in butter, carrots, celery and onions and fry until soft.
Add garlic and fry for 30 seconds
Add all ingredients and cover and simmer for 2.5 to 3 hrs keeping an eye on amount liquid.
If too little, add more wine, if too much liquid, simmer uncovered.
Serve with Rice or Potatoes
