| 1 Can of tuna 6 anchovies 1 onion diced 3-4 cloves of garlic diced White wine Capers 1 Can diced Tomatoes Spices - Oregano, Pepper, cumin, fish spice, peri-peri, bit of rosemary and thyme. Fresh Basil chopped up. |

| Fry Onion and garlic a bit in olive oil Add anchovies and fry so that they fall apart. Add drained can of tuna and fry for 5 minutes. Add white wine and let boil gently for 5 minutes to allow alcohol to evaporate. Add can of tomatoes and spices - Not the basil yet! Cook gently simmering, covered for 25 minutes, stirring occassionally. Turn off heat. Add capers. Cook enough pasta, preferably Linguini or Spaghetti. Drain pasta and mix with sauce in large pot. Heat frying pan lightly and add a bit of olive oil. Throw in enough pasta and sauce mixture for one serving. Add some of the basil and fry everything for 2 minutes stirring. Repeat for each person. Serve piping hot with nice white wine. |
