1 lb Chicken Breast 1 Packet button Mushrooms sliced 1 Packet Baby Spinach 2 Garlic Cloves diced Olive Oil 125 ml white wine 1/2 cube chicken stock 125 boiling water Flour Butter Salt and Pepper |

Chop the chicken breast into 1 square inch pieces Roll the chicken pieces in flour and add salt and pepper. Fry the pieces in olive oil with a bit of butter until cooked and set aside to keep warm Fry the mushrooms until cooked in olive oil and butter then aside to keep warm Fry the spinach leaves and the diced garlic in olive oil until soft then set aside and keep warm Mix the wine, boiling water and chicken stock in a cup Add 1 tablespoon of flour, 1 tablespoon of butter to pan and cook flour for 30 seconds to a minute in butter Add water, wine and stock mixture and simmer until thickened, 5 minutes approx. Serve warmed chicken, mushrooms and spinach on rice and top with wine sauce |
