Chicken Saltimbocca With Sage And Bacon

4 Chicken Breasts
8 Slices of Bacon
8 leaves of fresh Sage
2 tbsp Butter
Salt and Pepper
100ml White Wine
125ml Chicken Stock
Pound the chicken breasts flat
Place two sage leaves on each breast and press in to chicken
Season chicken a bit with salt and pepper
Wrap each chicken breast with 2 slices of bacon
Heat pan with butter
When ready to fry, place chicken in hot butter and fry each side 4-5 mins
Once cooked through, remove from pan and set aside to keep warm
Pour white wine in pan and boil for 2 mins to reduce alcohol and wine
Add chicken stock and boil until thickened and nicely reduced
Serve chicken on plate and pour sauce over each breast
Serve with plain pasta or potatoes
