Masala Chicken & Spinach Curry

400g Chicken breasts
2-3 Garlic Cloves, chopped
2cm Ginger, peeled and grated
1 Onion, chopped
1 Can of chopped tomatoes
1 or 2 Bay Leaves
40ml Masala Powder - or to Taste
Bunch of Baby Spinach leaves
Salt and Pepper
Basmati Rice
Yoghurt
Cook the onion, garlic and onion in olive oil until soft
Add the masala, bay leaf and tinned tomatoes and simmer for 15 to 20 mins.
Brown the chicken with a bit of masala and pepper
Add the chicken to the sauce and cook for 10 to 15 mins
Add the spinach and stir until the leaves are wilted
Add salt, pepper and more masala to taste
Serve with basmati rice and plain yoghurt
